Felföldi Zsolt 62334a9d46 beacon: update beacon light client for fusaka (#33272) ... This PR adds the "FULU" beacon chain config entries for all networks and fixes the select statements that choose the appropriate engine API call versions (no new version there but the "default" was always the first version; now it's the latest version so no need to change unless there is actually a new version). New beacon checkpoints are also added for mainnet, sepolia and hoodi (not for holesky because it's not finalizing at the moment).
